Artist’s statement: "My photo of keto bread rolls came about as a result of needing an alternative to wheat and grain based breakfast foods that was low carb, low to zero sugar, high in fibre, and healthy fats. This was my first attempt at making a recipe I found online. I was so delighted with the results because it is very tricky to bake solely with nut (almond) and seed (flaxseed) flours and psyllium husk, which is why I took the photo. Baking nut/seed breads is one of the things I want to keep in my life post covid."
